Tequila of the Month features Hermosa Organic Tequila, which includes Blanco, Reposado, and Añejo varieties. We’ve chosen this brand for its commitment to sustainability and its Certified Organic status. Unlike many tequilas, Hermosa Organic Tequila avoids chemicals, herbicides, pesticides, and synthetic fertilizers in its production, making it more environmentally friendly.This small-batch tequila has a rich history dating back to 1939. It uses 100% Certified Organic Tequilana Weber agave from the Tequila Valley region in Amatitán, Jalisco, Mexico. The agave is harvested by hand at peak maturity, typically between 8-10 years, based on sugar content rather than age. After harvesting, the agave is cut, quartered, and cooked in a traditional stone horno (oven). It’s then crushed using an old-fashioned roller mill.Hermosa Organic Tequila is naturally fermented using an open-air process without added commercial yeast, which would otherwise contribute aroma and flavor. It’s distilled twice in stainless steel stills with a copper coil, and only deep well water filtered through mineral-rich volcanic soil is added to bring it to 80 proof.Hermosa Organic Tequila Blanco is not aged.
Hermosa Organic Tequila Reposado is aged in used American whiskey barrels for a minimum of eight months.
Hermosa Organic Tequila Añejo is aged in used American whiskey barrels for a minimum of eighteen months.
